I got some Sencha green tea that’s supposed to be very healthy for us, but steeping yielded heavy tannin taste. Using cooler hot water helped, but it still wasn’t something I’d look forward to drinking every day. So I tried cold extraction – a half gallon of cold water and about 1/4 cup of green tea in a large mason jar, set in the fridge for at least 12 hours. It’s quite good – light, refreshing, and there’s absolutely flavor there.

Maple Lemonade
I’ve been making quick maple lemonade — 1:1 mix of lemon juice and maple diluted with water to taste. For me, that’s 1T of lemon juice, 1T of maple syrup, mixed into a large glass of water.
Maple Hot Cocoa
Anya and I made hot chocolate to warm up after spending a day shoveling snow — it’s a quick recipe. For each serving, add a cup of almond milk, 2 Tbsp maple syrup, 1 tsp vanilla extract, and 1 Tbsp of unsweetened cocoa powder. Put the milk in a pan. Stir in the maple syrup and vanilla extract. Once warmed, whisk in cocoa powder. Serve. Ideally with some homemade marshmallows — I need to make some honey marshmallows, we ate all of the homemade marshmallows I made last year.
