{"id":965,"date":"2017-03-05T11:33:47","date_gmt":"2017-03-05T16:33:47","guid":{"rendered":"http:\/\/lisa.rushworth.us\/?p=965"},"modified":"2017-03-06T00:20:34","modified_gmt":"2017-03-06T05:20:34","slug":"spent-grain-banana-muffins","status":"publish","type":"post","link":"https:\/\/www.rushworth.us\/lisa\/?p=965","title":{"rendered":"Spent Grain Banana Muffins"},"content":{"rendered":"<p>We made the <a href=\"http:\/\/www.northernbrewer.com\/medusa-limited-edition-cream-ale\" target=\"_blank\">Medusa Cream Ale<\/a> last night, and it\u00a0seems so wasteful to throw out the steeping grains (a.k.a. &#8216;spent grains&#8217;). I&#8217;ve added a cup to a 4c flour pizza dough recipe before &#8211; it makes a nice whole grainy crust. Anya has taken the &#8216;self service&#8217; approach to bananas, but she leaves somewhere between an empty peel and 7\/8th of a banana sitting on the kitchen counter. I&#8217;ve been collecting her banana bits in the refrigerator &#8230; so I wanted to make something with bananas.<\/p>\n<p>Banana Muffins With Spent Beer Grains<\/p>\n<p>5 T butter, melted<br \/>\n3.5 bananas<br \/>\n1\/3 c dark brown sugar<br \/>\n1 large egg<br \/>\n1\/2 t salt<br \/>\n2 t vanilla<br \/>\n1 t baking soda<br \/>\n2 t Penzey&#8217;s apple pie spices<br \/>\n2 cups spent beer grains &#8212; this batch was from a light cream ale, you&#8217;ll get a different taste using grains from a darker beer<br \/>\n1 1\/2 c whole wheat flour<\/p>\n<ol>\n<li>Preheat oven to 350 degrees F<\/li>\n<li>Melt the butter in a large bowl<\/li>\n<li>Mash the bananas into the butter<\/li>\n<li>Add the brown sugar and stir until dissolved<\/li>\n<li>Stir in the egg, salt, vanilla, baking soda, and spices<\/li>\n<li>Add the spent grains and mix well<\/li>\n<li>Add the flour, half a cup at a time, and stir until no streaks of flour are seen<\/li>\n<li>Scoop batter into muffin tin (I use a <a href=\"http:\/\/www.williams-sonoma.com\/products\/usa-pan-goldtouch-nonstick-muffin-pan\/\" target=\"_blank\">non-stick tin from Williams Sonoma<\/a>\u00a0and filled each one about 90%)<\/li>\n<li>Bake for 20-25 minutes, until a tester inserted into the middle of a muffin comes out without raw batter (a little moist is OK, uncooked batter\u00a0<em>not<\/em> OK)<\/li>\n<\/ol>\n<p><a href=\"http:\/\/lisa.rushworth.us\/wp-content\/uploads\/2017\/03\/DSC_0765.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-967\" src=\"http:\/\/lisa.rushworth.us\/wp-content\/uploads\/2017\/03\/DSC_0765-880x1024.jpg\" alt=\"\" width=\"880\" height=\"1024\" srcset=\"https:\/\/www.rushworth.us\/lisa\/wp-content\/uploads\/2017\/03\/DSC_0765.jpg 880w, https:\/\/www.rushworth.us\/lisa\/wp-content\/uploads\/2017\/03\/DSC_0765-258x300.jpg 258w, https:\/\/www.rushworth.us\/lisa\/wp-content\/uploads\/2017\/03\/DSC_0765-768x894.jpg 768w\" sizes=\"auto, (max-width: 880px) 100vw, 880px\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>We made the Medusa Cream Ale last night, and it\u00a0seems so wasteful to throw out the steeping grains (a.k.a. &#8216;spent grains&#8217;).
