{"id":3020,"date":"2018-03-25T13:52:09","date_gmt":"2018-03-25T18:52:09","guid":{"rendered":"http:\/\/lisa.rushworth.us\/?p=3020"},"modified":"2018-03-25T13:52:09","modified_gmt":"2018-03-25T18:52:09","slug":"green-springtime-muffins","status":"publish","type":"post","link":"https:\/\/www.rushworth.us\/lisa\/?p=3020","title":{"rendered":"Green Springtime Muffins"},"content":{"rendered":"<p>Makes 18 muffins in standard sized cupcake liners<\/p>\n<p><strong>DRY INGREDIENTS:<\/strong><\/p>\n<ul>\n<li>2 cup flour, whole wheat<\/li>\n<li>1\u00a0<sup>1<\/sup>\/<sub>2\u00a0<\/sub>teaspoon cinnamon<\/li>\n<li>2 teaspoon baking powder<\/li>\n<li><sup>1<\/sup>\/<sub>2\u00a0<\/sub>teaspoon baking soda<\/li>\n<li><sup>1<\/sup>\/<sub>4\u00a0<\/sub>teaspoon salt<\/li>\n<\/ul>\n<p><strong>WET INGREDIENTS:<\/strong><\/p>\n<ul>\n<li><sup>3<\/sup>\/<sub>4\u00a0<\/sub>cup milk<\/li>\n<li><sup>1<\/sup>\/<sub>2\u00a0<\/sub>cup honey (I use a combo of maple syrup and honey)<\/li>\n<li>1 large banana<\/li>\n<li>6 ounce spinach<\/li>\n<li><sup>1<\/sup>\/<sub>2\u00a0<\/sub>cup butter, unsalted<\/li>\n<li>1 large egg<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350 F, and line a muffin pan with paper liners (or use silicone muffin cups sprayed with cooking spray).<\/li>\n<li>Combine all dry ingredients in a large mixing bowl.<\/li>\n<li>Melt butter. Blend the wet ingredients in a blender or food processor until completely pureed.<\/li>\n<li>Pour the puree into the dry ingredient bowl, and fold together gently until just combined.
