The pita was a basic dough recipe (although fairly wet dough!)<\/p>\n<p>2 1\/2 tsp active dry yeast<br \/>\n1 2\/3 cups warm water about 95 degrees F<br \/>\n1 tsp maple syrup<br \/>\n1 1\/4 tsp kosher salt<br \/>\n4 cups unbleached all purpose flour<\/p>\n<p>Maple and water were mixed together &amp; yeast added. The mixture sat on the counter for about twenty minutes and was <em>really<\/em> frothy. Salt and flour combined in the mixer, then the liquid added and dough kneaded for about ten minutes.
